I like the built in camera app and air play to my apple tv
Avid is currently the best video editor in my opinion and can be a great educational tool
I like Notability for taking notes.

I have been working with 4th grade students to use Flash to create scientific Illustrations by tracing their photographs and then labeling them and adding button roll-overs with audio.

We do a similar thing at our local theater. They charge $10 and our program gets $5 but it is bundled with a current film (Avengers this year)

Great point.
How are others dealing with Audio? I am using a Zoom H4N audio recorder and then merging the video and audio in post.

Great suggestion. That is what I had to do until we upgraded to 64bit and some more RAM.
